Saturday evening I made a white pizza with potatoes and it turned out really good, so I thought I would share the recipe with you.
White pizza with potatoes
Start with about 25g fresh yeast, crumble it in a large bowl and add 1 tsp of salt. Stir until the yeast has melted. Add 1/2 cup/1dl luke warm water and some honey/sugar/agave – this is to help the yeast. Stir and add a few tablespoons of olive oil. Then I used about 1/4 cup/0.5dl rye flour. For the rest of the flour, I add a bit and stir and then continue until I have a dough thats firm enough for you to knead but still a bit sticky. Form a ball and pour some oil on top of it and coat the dough with oil using your hands.
Leave in the bowl with a damp kitchen towel on top for an hour or so.
While the dough is rising, take a couple of potatoes and slice them thinly, I use a mandolin. With organic potatoes I like to keep the peel on, but this is of course optional.
Turn the on the oven to 250C/470F and prepare two cookies sheets lined with parchment paper. When the dough has risen, divide it into 4 parts. With your hands, kneed the dough flat on the parchment paper until it’s about .5 cm thick. Add the potatoes evenly and crumble the feta cheese* on top.
Bake in the middle of the oven for about 10-12 minutes or until the edges are browning. Cut up and enjoy!
This delicious pizza is great to bring with you for a picnic as well, just wrap it up and store in your fridge. I always make at least 1 extra pizza to have either for lunch the following day or to throw in the freezer.
*I used ca 50g for all of my pizzas together.
